The Grain Divide: Rebuilding the Foundation of Food

The W. P. Carey School of Business, Morrison School of Agribusiness, at ASU Polytechnic is hosting a sneak preview of a documentary film entitled The Grain Divide.  The film shows how ancient/heirloom grains can be used in the local food system, in particular by local chefs, bakers, brewers, etc.  The sneak preview will be followed by a panel discussion.  The movie has a lot of implications for local food marketing, in particular how end users demand for more flavor diversity in breads, cakes, etc. are driving the movement towards the use of ancient grains relative to traditional commodity wheat.  The panel will consist of JD Mclelland (the film’s director), Steve Sossaman (Sossaman Farms), Emma Zimmerman (Hayden Flour Mills); Patrick Ware (Wilderness Brewing), and Chris Bianco (Pizzeria Bianco).
